Msemen Stuffed with Halal Chef Mortadella and Cheese

Msemen are a jewel of Moroccan cuisine: thin, square crepe-like flatbreads traditionally served warm for breakfast or as an afternoon snack, accompanied by honey, butter, or olive oil. But beyond the classic, msemen also provide a perfect base for savory and creative dishes. Today, we bring you a modern and delicious version: msemen stuffed with Halal Chef beef Mortadella and melted cheese.

Ingredients.
  • Msemen
  • Sliced Beef Luncheon Meat
  • Cheese
  • Olive oil or butter

Preparation.
  1. Prepare the msemen: If using homemade msemen, cook them lightly in a hot pan without browning too much. If using store-bought, warm them briefly so they become flexible.
  2. Assemble the filling: Place a slice of Halal Chef mortadella and a bit of cheese in the center of each msemen. If desired, add chopped parsley or a pinch of cumin to enhance the flavor.
  3. Fold and seal: Fold the msemen into a closed square (like an envelope), making sure the filling is well enclosed.
  4. Heat and serve: In a non-stick pan with a bit of butter or oil, cook the stuffed msemen on both sides until golden brown and the cheese is melted.

And that’s it! A crispy, creamy, and flavorful bite. Will you give it a try?

Can’t find the dough or want to make everything from scratch? Here’s the recipe to prepare it at home:

Basic Ingredients for Msemen:

  • Wheat flour (you can mix in a bit of fine semolina for extra texture)
  • Warm water
  • Salt
  • Vegetable oil or melted butter (for greasing and layering)

Basic Step-by-Step Preparation:

1. Make the dough
Mix the flour with a pinch of salt, then gradually add warm water while kneading until you get a soft and elastic dough—not too sticky, not too dry. Cover and let it rest for 20–30 minutes.

2. Shape into balls
Divide the dough into small balls about the size of a walnut or slightly larger.

3. Stretch and grease
On a floured or oiled surface, flatten each ball very thin using your hands or a rolling pin. Then, using a brush or your hands, spread oil or melted butter over the surface.

4. Fold to create layers
Fold the dough in three parts or into a square, like an envelope, to create multiple layers. Sometimes it’s folded into a rectangle first and then into a square. The goal is to trap air and fat between the layers so it becomes flaky when cooked.

5. Cook in a pan
Heat a non-stick pan over medium-high heat and cook each msemen on both sides until golden and crispy. You can add a bit more butter or oil in the pan for extra flavor.
